I go with "Happy Fourth of July" or "Happy Fourth" just because that's what I'm used to hearing. It's also a little easier to say.
Oddly, I've heard "Happy Independence Day" used more often when I'm overseas for the holiday. A few years ago I was in London and we got quite a few "Happy Independence Days" from bartenders and bouncers and other bar-goers that night. It was a bit jarring. Similarly, when I was in Costa Rica the next year, there were many "Happy Independence Days" but no "Happy Fourths."
